The Evolution of Fine Dining, Vegan Style

Cooking is an art form. Having to get creative with a completely vegan menu takes it to another level. Restaurateurs Rich Landau and Kate Jacoby, a husband/wife team and owners of Vedge, located in Philly, have done just that and more. Getting an early start with vegan dining in the ‘90s, Landau conceptualized and launched Horizons Cafe (which later dropped the “Cafe” part) with no formal training as a chef. His venture began with an inclination to serve the college crowd, but to his surprise, a more established and mainstream audience was starting to trickle in.
