Johnson & Wales Gets Creative With Food Waste

Food waste is an inevitable consequence of operating a kitchen. It's estimated that about 10% of solid waste is wasted food, and Johnson & Wales, a school that produces 200 tons of waste in just two of its buildings, is doing something about it.
