We’ve taken a special seat at the table at one of our Foodable Top 25 Restaurants in Miami to take a further look at what makes a local restaurant so buzzed about on social. Yardbird Southern Table & Bar, a 50 Eggs concept, opened in October 2011 and has been leading the way in restaurant innovation ever since. We picked this particular restaurant to feature, as it has just marked an important milestone in its history – Yardbird will open its second restaurant at The Palazzo in Las Vegas.
This opening wouldn’t have been possible without it’s major success in Miami, so we took an insider’s look into the unique Yardbird experience.
Although the establishment first opened with Top Chef notable Chef Jeff McInnis, Yardbird is now run by Chef Clay Miller, who was named a “Best New Chefs of 2010” by Food & Wine. A graduate from Pennsylvania Institute of Culinary Arts in Pittsburgh, Chef Miller has worked in a handful of recognizable kitchens, including The Dining Room at the Ritz-Carlton, Buckhead in Atlanta, as well as its sister hub in Orlando. Daniel and Tabla in New York City, and The French Laundry also grace his resume.
There aren’t many restaurants in Miami that highlight southern cuisine. With items like fried green tomatoes, shrimp ‘n’ grits, and fried chicken and biscuits, you’ll instantly feel transported to the south. Skeptical that their fried chicken isn’t as good as your mama’s? Try their Mama’s Chicken and Biscuits - free range fried chicken smothered with pepper jelly and severed on housemade buttermilk biscuits. These heavy morsels recently tied for first place at the New York City Wine and Food Festival Chicken Coup Competition. “It’s all in the brine,” said Chef Miller during his interview on The View after tying for first place.
Yardbird also offers brunch, which is just the antidote after a night out on South Beach. On the menu, you can find favorites like the BLT Benedict Cast Iron Casserole with a buttermilk biscuit crumble, soft poached organic egg, house-cured bacon, cherry tomato salad, frisee and hollandaise. More of a waffle person? The Big Ol’ Waffle with fresh Florida strawberries n’ whipped cream and bourbon (why not?) maple syrup is the perfect solution.
Whether it’s morning or night, you won’t want to miss out on a cocktail from Yardbird’s impressive Bourbon Bar. The restaurant was built around the bourbon concept and boasts a selection like no other. “We wanted that [bourbon bar] to be the focus. Last month, we sold more bourbon than anybody from here to New York,” said 50 Eggs CEO John Kunkel in a recent Foodable TV interview.
The Yardbird experience offers more than a packed bar and a possible Heat player sighting – the restaurant is constantly coming up with innovative ways to engage and entertain their customers. For instance, Kunkel’s Midnight Chef’s Table is a concept dinner in which tickets are sold for a family style dinner hosted by the house Chef in collaboration with other known Chefs. More recently, Yardbird hosted a special meal and bourbon selection curated by the famed Master Distiller Chip Tate.
