One Man's Trash is Another's Signature Dish?

There's a new trend within restaurants, and it's called Trash Fish Dining. Despite its unattractive name, it's catching on with a lot of chefs who are searching for fresh ways to fill their menus with sustainable (and delicious) seafood. James Clark, Executive Chef at Carolina Crossroads Restaurant, started telling fisherman to bring him back fish that would have otherwise been tossed. Now, he makes signature dishes from unheard of fish like Sheepshead and Scorpion Fish -- and they are delicious.
