Recently there has been more of an authentic focus on Mexican cuisine. Several Nola restaurants, such as Casa Borrega and Del Fuego, are not catering to the Americanized Tex Mex lovin' consumers, but instead they are focusing on regional cuisine from Veracruz, Mexico City, Puebla, Baja and Oaxaca.
