Vegas will be high on the hog this weekend as the 6th annual Cochon 555 event kicks off on Sunday. If you love pork, this is the place to be. Six chefs - including Jet Tila, Mario Batali, Joe Bastianich, Jason Neve and Brian Howard - will compete this weekend for the title Prince (or Princess) of Porc.
Chefs were given the entire week to prepare for the competition, considering they have to create six unique dishes (around 1,500 portions) using a whole 210-pond Heritage pig. So what sort of dishes will they create? Chef Brian Howard shares his techniques and secrets to this year's competition here.
