There’s a lot going on with pizza these days. The tried and true American food staple, with tons of customizable parts – thick crust or thin crust, plain or toppings, small or large – make it all the more scalable for pizzerias to be flexible with the market, especially with the continuously rapid growth of fast casual concepts. Chipotle’s announcement of partnering with Pizzeria Locale is enough evidence to prove that even Chipotle wants to – literally – become the “Chipotle of Pizza.”
But Steve Ells and the Chipotle team aren’t the first fast casual executives to invest in a pizza concept: Fast casual pizzerias like Live Basil Pizza, Blaze, Pizza Rev and Uncle Maddio’s were all created by notable players in the fast casual and fast food sectors.
