As restaurants rethink their approach to their menus, favoring more genuine or locally sourced ingredients , a nonprofit organization has taken the concept to a different level. The Island Grown Initiative, located in Martha’s Vineyard, Massachusetts, sends trained butchers to small farms, where they slaughter and clean farm-raised animals and package them for local restaurants and farmer’s markets.
The Island Grown Initiative is one the the 20 “mobile slaughterhouses,” which has been growing in size since its conception in 2001. Although the first mobile slaughterhouse was in Seattle, it has now spread to states such as California, Texas, Nebraska and even Alaska.
