How Kent Rathbun’s 17-Year-Old Abacus Stays Relevant Today

With restaurants shuttering every month, it’s amazing to find gems that have stayed on top of the game for more than a decade. In Dallas, Kent Rathbun’s Abacus, a Foodable Top 25 Restaurant, has been open for 17 years. Count it.

“I knew that we could create the food and the ambiance, it was whether Dallas was ready for a restaurant like this,” he says.

In this “Table 42” vignette, the four-time James Beard Award-nominated Rathbun brings us into his kitchen and shows us how he whips up a few of his favorite things: mustard-crusted lamb and leek hashbrowns. Watch as the world-renowned chef tells us what inspired him to get into the biz, and what he hopes diners take away from the Dallas dining scene and, more specifically, Abacus.
