Nordic themed pop up Holdfast made headlines when it first appeared in 2013, introducing Portland to a new and inspired vision of casual yet modern dining. Founded by Will Preisch and Joel Stocks, Holdfast would go on to garner a cult like following amongst locals and the pop up has been ranked as one of the top dining options in Portland.
Now, Holdfast has moved into its new location at working winery Fausse Piste in east side Portland and on February 12th, the pop up plans to reopen with its second round of unique dining experiences – chef collaborations.
Continuing with the multi-course paired menu and counter seating format, the new chef collaboration dinners are set to feature chefs from some of Portland’s favorite local dining spots such as Le Pigeon. Holdfast’s new concept is set to include a series of six and nine course tasting menus with wine pairings and juice cocktails that will change weekly to feature special new chef collaborations.
