Portland newcomer Harvest is one of the city's most recent vegan restaurants to open over the last year, bringing with it an "agrarian minded" menu that looks to highlight vegetables in their purest form. Spearheading what is referred to as 'root-to-tip' cuisine, the restaurant advocates a no-waste policy in which every possible part of the produce is utilized to create the final meal.
With a menu set to change every season, Harvest plans to serve up dishes that "showcase the bounty of the dirt" by featuring a number of southern inspired creations utilizing local, seasonal ingredients.
