Los Angeles' rapidly growing Arts District is a hotbed of business development welcoming a number of new restaurant concepts almost weekly. Yet locals wonder if the small culinary neighborhood can maintain the not one but three vegetarian and vegan concepts that have opened in the last year, all within five blocks of each other. First to arrive was Zinc Cafe & Market, followed closely by local vegetarian favorite Cafe Gratitude and The Springs, a 92 seat vegan restaurant.
Local restaurant operators are not concerned, however. Zinc Cafe owner Jared Stein explains that while the three concepts share a focus on vegetarian/vegan cuisine, each represents an entirely individual concept with a unique culinary focus.
