Consider that phrase for a minute. What word associations does it bring up? Perhaps live music, smoked dishes, rustic decor. And definitely meat. 

Such cannot be said for Nashville’s new restaurant AVO, a vegetarian joint located on Charlotte Ave., not far from Centennial Park. And we’re not talking about some frumpy, get-it-while-it’s-hot concept jumping onto the trend train. AVO is full-on raw vegan with systems in procedure to match its ethos, like making sure every dish it serves has its nutrients and enzymes preserved by not cooking fare above 118 degrees. Or housing a “hanging wall garden” by the bar. 

One mistake not to make: Vegan’s not all hemp and fake cheese. Far from it. And at AVO, the drinks are coming in hot with a wide selection of classics: rye, scotch and margaritas, with a bounty of gluten-free beers. Oh, and you can’t forget the raw candy bars. Read More
