Check Out These Chef Recipes Using Frozen Fresh Alaska Halibut

Today in the Foodable Smart Kitchen and Bar Studio, we take a look at Frozen Fresh Alaska Halibut.

Halibut is a naturally lean whitefish with a sweet, flaky, snow-white meat that is easy to prepare and beautiful on the plate. We asked Chef Thomas Stewart, executive chef of Gianni's Restaurant in The Villa Casa Casuarina, formerly known as the Versace Mansion, to demonstrate how to properly filet a full Frozen Fresh Alaska Halibut. Watch as he creates two recipes using Mediterranean and Italian influences that are present in his renowned Cuisine. 

Recipe 1: Alaska Halibut Crudo | Turmeric and Sunchoke Gold Sauce | Crispy Kelp

INGREDIENTS

Crudo
5 oz. Frozen Fresh Alaska Halibut
1 tbsp. Yuzu
1tsp. Orange juice
2 tbsp. Lemon oil

 

 

Turmeric Cold Soup
1 lbs. Sunchokes
2 Branches of Lemongrass
1 piece Tumeric
1tbsp. Turmeric powder
1 dash Curry Powder
1 can Coconut Milk
1 clove Garlic
2 ea. Mango
 

Garnish
Fennel Frawn
Micro Flowers
Nori Paper
Crispy Kelp
Hijike dehydrated 24 hrs.

Recipe 2: Alaska Halibut Fillet | Beet and Green Kelp Foam | Dehydrated Sunchoke Chips | Pickled Turmeric

INGREDIENTS:

Halibut Fillet
5 oz. Frozen Fresh Alaska Halibut
Pan seared on one side in butter. 

Sunchoke Chips
Cut thin and baked.

Beet + Kelp Foam
4 Large Red Beets Peeled and Sliced
16 in. Piece of Kombu Rinse and Dryed
4 oz. Clean Kelp
40 oz. Water
10 grams Leticen
Salt to taste
Pepper to taste

Pickled Turmeric
1 each Watermelon Radish
1 piece Turmeric thinly sliced
1/2 cup Vinegar
1/4 cup Sugar
1/2 cup Mirin
