Geoff Watts fell into the coffee industry by accident.

He started out as a barista and became very interested in the chemistry of coffee roasting after falling in love with the idea of coffee having a large spectrum of taste.

What he never imagined was the doors his new-found love for coffee would open. Most importantly, how his current role as the vice president of coffee for Intelligentsia, a Chicago-based artisan coffee company founded in 1995, would inflict positive change in coffee producing communities abroad.

Pastoral Artisan Cheese, Bread & Wine Has a Unique Role in Chicago's Food Scene

On this episode of On Foodable Side Dish, we learn about Pastoral Artisan Cheese, Bread & Wine a concept that focuses on small batch, high quality, hand-crafted products. There are four stores in Chicago and also two cheese-and-wine-oriented restaurants providing service in intimate settings.

While in the Windy City, the Foodable team had the chance to meet up with Greg O’Neill, the co-founder & CEO of Pastoral Artisan Cheese, Bread & Wine. O’Neill explained to us the role of Pastoral in the Chicago food scene.

“We sell cheese to about 100 restaurants in the city of Chicago, so if you’re having cheese at one of the great restaurants of Chicago, it’s probably coming from us,” said O’Neill. “It’s an important food city and Pastoral is very proud to be a part of that…”

O’Neil explains how Pastoral is tackling the online retail challenge by creating fun reasons for people to come into their physical stores. He also gives credit to club stores and supermarkets, like Whole Foods, for raising the level of knowledge of the average customer.

“We’ve evolved their palates, they trust our palates, and I think a lot of restaurants have done the same,” said O’Neill. “Now, we get the chance to get people to be a little more risky, to try some new things, who don’t want to become creatures of habit and are coming to find out what’s new…”
