On this episode of On Foodable Weekly: Industry Pulse, we're looking at Uber Eats' newest experiment, virtual restaurants

That's right, the tech giant is taking another leap into the restaurant industry. This time, they're using their stores of data from UberEATS to analyze gaps in food offerings in American cities.

For example, Uber saw that a community in Chicago was searching the UberEATS app for fried chicken. But with no fried chicken-focused restaurants in the, area Uber approached one of their operator partners with the information. Knowing that SiPie Pizzeria had the right equipment, Uber proposed the idea of a whole new restaurant focused on fried chicken that is available only through the UberEATS app. The new concept, Si's Chicken Kitchen has since surpassed the original concept in delivery revenue.

Even though the healthy food movement is in full force, most consumers crave a certain form of comfort food. These meals provide a nostalgic or sentimental value to diners, but often have a high caloric nature and carbohydrate level. 

Foodies are more than willing to indulge in a chicken and waffles dish, a short rib grilled cheese, a four cheese mac and cheese and even an occasional happy meal.

But, serving comfort food isn’t only the focus of fast food and fast casual restaurants. Casual dining and fine dining establishments are appealing to the comfort food lovin’ consumer. 

For example, Yardbird is a fine-dining concept in Miami (and now Vegas) that is known for its classic southern cooking. With a menu serving fan-favorites like the Mama’s Biscuits, Chicken N’ Watermelon N’ Waffles, Macaroni & Cheese and Grits.

Yardbird Restaurant Features Innovative Pickling Program

One of the more noteworthy Vegas restaurant openings was the arrival of Miami's Yardbird at the beginning of the year, and the restaurant is continuing to live up to the hype. Serving up a number of Southern-style, comfort food dishes, Chef Todd Harrington has recently been making headlines for his innovative pickling program that has the restaurant featuring over twenty different types of pickles.  

On the restaurant's menu includes a number of unique pickles such as pickled okra, jalapeno, watermelon, turnips and even oysters. In addition, Chef Harrington has been playing with different methods of pickling, including soaking hard boiled eggs in beet juice and the house specialty: cucumbers soaked in Kool-Aid. Read More
