Will Startup Hungry Planet™ Gain Momentum After Recent Success in a California School District?

A California school district began to offer plant-based meals across all their cafeterias this past academic year and had students choose whether or not they wanted to eat them based on taste. “The initiative was so successful, the meals will likely be offered again next year,” reports KEYT.

We’ve heard about companies like Impossible Food and Beyond Meat making their way in restaurants, but the Santa Barbara Unified School District actually sourced her plant-based protein from a startup based out of Missouri. It’s called Hungry Planet™.

According to the company’s website, it focuses on creating an alternative protein to ground beef, chicken, pork, Italian sausage, chorizo sausage, and crab for culinary professionals to use as a 1:1 substitution in innovative entrees. The company says it develops its faux meats to delight the demanding tastes of meat lovers in the heart of the Midwest.

 James Beard Foundation Announces 2018 Restaurant and Chef Award Semifinalists

The James Beard Foundation has just announced its list of Restaurant and Chef Award semifinalists for the 28th annual James Beard Foundation Awards. After receiving more than 20,000 entries, semifinalists were chosen for each of the  21 categories like best new restaurants, outstanding bar programs, and rising star chefs under 30.  

The foundation will announce the final nominees for each award category on March 14th during a press conference held at Stephen Starr’s restaurant, Parc.

About the James Beard Foundation’s awards

After receiving entries, the Restaurant and Chef Committee reviews them to determine eligibility and regional representation. Based on the results and eligibility requirements for each award, the committee then produces a nominating ballot that lists the semifinalists in each of the 21 Restaurant and Chef Award categories. The list is then voted on by 600 regional restaurant critics, food and wine editors, culinary educators, and past James Beard Foundation Restaurant and Chef Award winners to determine the final five nominees in each category. The same judges then vote on these five nominees to select the winners.

The James Beard Foundation Awards Gala will be held at the Lyric Opera of Chicago on Monday, May 7, 2018. During the event, which is open to the public, awards for the Restaurant and Chef and Restaurant Design categories will be handed out, along with special achievement awards Humanitarian of the Year, Lifetime Achievement, Design Icon, Who’s Who of Food and Beverage in America, and America’s Classics. A gala reception, featuring acclaimed chefs and beverage professionals from across the country, will immediately follow.

Winners of the 2018 James Beard Media Awards will be announced at an exclusive event honoring the nation's top cookbook authors, culinary broadcast producers and hosts, and food journalists at Pier Sixty at Chelsea Piers in New York City April 27th.

Adam Sachs No Longer With Saveur

Adam Sachs No Longer With Saveur

Saveur editor-in-chief Adam Sachs’s tenure at the food magazine is over. The magazine’s publisher, Bonnier Corporation, laid off 70 staff members at offices in California, New York, and Florida, Recode reported Wednesday.

Several worked at Saveur magazine including Saveur digital editor Dan Dao. After news of the layoffs broke, rumors quickly swirled that Sachs was no longer with the company. Sachs confirmed his departure to Grub Street over email but added that he could not comment beyond that.

According to the New York Times, Saveur is reducing its publication schedule to four issues a year. Its editorial department now consists of just six full-time employees.

The news was met with grim reactions, but on Twitter, editor Alex Testere reaffirmed that the magazine was not folding.

“The few of us left are obviously reeling a little bit from losing some of our closest friends and colleagues, but we still have faith that we’ll be able to make Saveur a beautiful quarterly magazine, and also keep up our original digital content,” Testere wrote to Grub Street the day after the news broke. “The layoffs are sad and unfortunate, but I’m personally looking forward to continuing to work with everyone in whatever capacity we can.”

Before taking the top position at Saveur after longtime editor James Oseland, Sachs had a long career as a writer covering food and other subjects. He wrote for publications including GQ, Bon Appétit, and Details, and has won several James Beard Foundation Awards. Sachs was brought on before Saveur’s digital relaunch in 2015.

“Saveur is special,” Sachs said to the New York Times. “I know there’s an audience for the kind of in-depth, smart reporting the magazine has always been known for. The challenge for anyone in this business now is, how do you package and sell the good stuff in a way that’s sustainable?”

Can the government force them to use their artistic ability to support something they do not? Does food as an artistic expression fall under your right to freedom of speech? Should businesses be held to a different standard as a service to their community?

The Supreme Court heard oral arguments yesterday in the Masterpiece Cakeshop v. The Colorado Civil Rights Commission. In 2012, a same-sex couple walked into Masterpiece Cakeshop with the intention of ordering a wedding cake. But the owner would not create the wedding cake, stating that it would be against his religious beliefs. He did state that he offered any other cake or product in the store, but he would not use his artistic ability to create a wedding cake for an inherently religious ceremony he did not believe in.

Aside from the freedom of religion argument, this case is asking another question: If a baker, a chef, or even a tailor, as Justice Gorsuch questioned, creates a product deemed a work of art, is it protected under free speech? If so, can they decide who they will serve and where do you draw the line?
