Nathi Toro has incorporated healthy eating with healthy living. She has taken her passion for food and entrepreneurial abilities and co-founded several consciously healthy concepts all over the world. In 2011 she turned a new leaf and became plant-based in hopes of transforming her health through food. Seven years later, she hopes she can share her lifelong lessons, eating habits with everyone by creating approachable recipes, everyday tips, and providing culinary experiences that will inspire a lifelong healthier eating style.
Her formal education as a plant-based chef comes from the Matthew Kenney Academy. Previously, she studied culinary nutrition and gastronomy in her home country Colombia.
Informally, it comes from long hours spent trying and creating recipes in her kitchen... sleeves rolled up, music playing and the occasional glass of red wine. It’s a good time to mention she is an avid runner and triathlete who also enjoys giving back to her community. She volunteers every semester at the FIU Biscayne Bay Campus working closely with students in hopes of developing their culinary skills and careers.
Consulting for several plant- based/vegan companies keeps her aware of industry trends and always with one foot in the kitchen, constantly learning and always growing. Her most recent client, and now good friend, is celebrity chef Chloe Coscarelli; working alongside her to introduce Chef Chloe and the Vegan Cafe in the Design District in Miami; has been exciting and rewarding.
Presently, Nathi serves as the Academic Director at Plantlab; a world-renowned plant-based academy.
